Meeting Callie


Tribu was a dream that Tabitha percolated for years and made come true by building our boutique champagne lounge in the auxiliary building at the Lakewood spa location. 

Sacred Hour’s little sister got her legs in February 2020, and in a heartbreaking turn of events we were forced to close the doors almost immediately after it opened in order to safely adhere to CDC guidelines.

All this considered, along with how special the unique space in Tribu is to our spa and our community, finding exactly the right person to helm our little lounge was of extreme importance, but with a stroke of luck we met Callie.

A restaurant industry veteran who has served in just about every hospitality position there is, Callie is an artist with an eye for presentation and a mind for food and wine. With a background in fine art and having served as the lead design specialist for a cake company in Los Angeles, the visual impact of food drives her menu design just as much as how good it will taste.

In talking about the upcoming summer menu Callie quipped: “I always want to do something with color – as I was growing up my mom making dishes would always say ‘this is missing a color, it needs red.’” She is planning a variety of fresh, flavorful dishes that are a decided departure from the typical bland finger sandwiches we have come to associate with “spa food.”

”Think Panzanella, falafel, and lots of fresh fruit and veggies – and with patio season coming up I can think of nothing more refreshing than a big fresh salad, especially after grabbing some table time inside the spa. 

While she has made a living in hospitality for years (you might even recognize her from Spice Kitchen + Bar) Callie is also a painter, and spent the quarantine by taking private commissions for paintings. You can see her desire to bring functional art to the menu at Tribu, and we are so grateful that she chose to bring her skill for art and business to our spa in Lakewood. Find her behind the stick in the champagne lounge any time from 12-8 during the week, and find her inspired food and beverage menu items in the coming seasons.
